DEVON ALEXANDER'S HEALTHY DECADANCE
One thing college taught me with all those research paper's was to give credit where it is DUE!
So Since this recipe that I am about to share is not mine....... I'm sure you can put the pieces together!
Devon Alexander (sp?) has a show on the food network. She is a lady that lost ohh??? 60-80+ lbs by "adjusting" some of her favorite foods so that they had more "health cautious" ingredients!
I make this dish for my "need-a-meal" (mainly families that just had a baby, surgery, tragedy, etc.). It's great because after preperation it can be stored in a freezer like your typical casserole, or if your timing is right on or scheduled you can tell the "recievers" to heat the oven and its quick!
Pre-heat 475degrees
Ingredients (vary on what you want)
MAIN:
chicken (cooked) any kind. I get the kind from costco, grilled, cooked and just takes 1 and a half minutes to cook.
9- corn/white tortillas (you will shred them up so you can use as many or less as you want)!
1 regular can of RED enchilada sauce
1 regular can of GREEN enchilada sauce
1 and a half cups of shreded cheddar (Mild)
More choosier ingredients:
1/2 cup canned chopped green chiles drained
1/2 cup olives drained
opt:1/2 cup of mushrooms
opt:diced bell peppers
you need low sodium taco or burrito seasoning
and- couple dashes of cilantro
You will have a couple mixtures and a couple layers
The first order of business is mixing your chicken in the seasoning. (I just put it in a baggy and shake it for a bit.
Second is combining the two sauces in a bowl (or big measuring cup)
next, is called the "cheese mixture" you just add the green chilies and whatever other canned goodies. i,e mushrooms, olives.
Last you just layer!
Starting with layering the 9x13 dish with 1/3 of the sauce, then tortilla's (shreded),next is chicken, and last cheese mixture, then repeat the layer two more times!
OH P.S. I love to always use disposible casserole dishes and double my batch, they are easy to throw in the trash/ clean up, and you always have one for yourself, maybe someone in need, or maybe just a last minute meal the following week!
